This definitely goes in the category of “Future Problems”. We don’t have anybody that would have need of this, but it sure looks like a very interesting plugin.

Built for time-sensitive and mission-critical projects, teams can collaboratively edit files of any format — text documents, spreadsheets, images, sheet music… anything — all the while, seamlessly tracking the document’s progress as it moves through your organization’s existing workflow.
It looks to be a very powerful and flexible open source project. We’ll definitely keep it in mind if we encounter a project that requires document version management.
Unfortunately, as of this writing, it hasn’t been updated in the last 9 months and has only been tested up to WordPress version 5.3.4. So whether it will be there if we ever need it.
